The NZ in two weeks itinerary that I posted in another thread is fairly rushed and you could do the same itinerary spending longer in each place.
Alternatively, you could go to a few places that I missed such as Nelson, Northland (the area north of Auckland) or the southern bit of the South Island (which includes Dunedin and Te Anau). If you stuck to the two-week itinerary and added Nelson and either Northland (in summer) or Dunedin and Te Anau (in winter) you still may have time to do one of the Great Walks.
