Question

Is it easier to get a place in NZ for a home base or is it cheaper to travel by hostel every night.

I'm not exactly sure what you mean.

If you're working somewhere in NZ for three months or longer it would probably be cheaper to rent your own house or share a house with other travellers.

However it is probably easier to stay at hostels every night rather than rent a house to use a travel base. New Zealand may be small in comparision to Australia, Canada or the United States but it's still relatively big, particularly if you're travelling from North to South.

It is possible to use Auckland as a base for exploring the northern part of the North Island, Taupo or Rotorua as a base for exploring the centre of the island or Wellington as a base for exploring the south of the North Island, however you'll spend more on transport costs than you'd save on accommodation and a lot of your time would be spend travelling between places rather than enjoying your destination.
