I'm going to be doing some travelling around Europe but I'm not sure how long I'll want to spend in each country/city so it's not going to be possible for me to book a hostel more than 24 hours before I arrive (with the exception of the first hostel). I've heard that you can just show up at a hostel and get a room/bed in a dorm then and there, subject to availability. Is this a bad idea? I'll be travelling for about a month between May and July.

Dude, you'll be completely fine. I traveled for months and rarely was there a time when a hostel/bed&breakfast wouldn't put me up for the night.
There’s nothing wrong in booking in advance, it will help you lessen the problem of cramming. It also allows you to choose from different flight schedule.

I always tended to book a day in advance, but no more in case my plans changed. With the hostel booking websites around and the sheer number of hostels in most places you don't really need to
i always book in advance not only on busy seasons. Specially on car rentals. but even hotels, it can help you save. just cancel it prior to the agreement to avoid cancellation fees if you have found a better rate
